The Best Granola Ever ... in My Humble Opinion
While cooking is not my favorite activity...I eat to live, not live to eat...there are some foods that make me feel at home, comfortable and even healthy at the same time. Sounds like a winner, right?
One of those is a new home-made granola recipe I found which uses ingredients I especially love; old-fashioned oats, almond butter (hooray protein) and dried cherries. I made a batch when Laura was home for her baby shower a couple weeks ago and everyone loved it. So this past weekend I made more just because I wanted it to munch on.
Here’s the recipe!
½ cup almond butter
½ cup honey
¼ cup brown sugar
Pour or scoop this thick yummy-ness into a saucepan and heat on low till it warms and melts together. Turn off the heat, add and stir in:
1 teaspoon vanilla
½ teaspoon cinnamon
While the almond goodness is warming on the stove, measure into a big mixing bowl and stir to mix:
3 cups old fashioned oats
1 cup sliced almonds
¾-1 cup of dried cherries
1 teaspoon sea salt
Pour still warm almond butter goodness over the oats mixture and stir well till it’s all coated.
Spread on parchment paper on a flat cookie sheet or jelly roll pan
Bake at 325 for 10 minutes, remove and stir the granola, return to oven and bake another 10 minutes. Remove and let cool for about 10 minutes then begin breaking up the larger chunks into smaller bite sized pieces.
Store in quart jars!
It’s great on a bowl of greek yogurt or right out of the jar!
